Chef Stephan Pyles

The Stampede 66 at the Delta Hotels Dallas Allen, has become one of the brightest stars in Dallas, greatly due to the culinary vision of celebrity chef Stephan Pyles. A fourth-generation Texan, Chef Pyles is inspired by his roots, creating innovative Texan dishes with a contemporary flair.

For decades, Chef Pyles has been reimaging Texas cuisine and now he's introduced his inventive culinary style to Stampede 66, his signature restaurant. Drawing from the flavors and aromas of his childhood, Chef Pyles is the first chef in the southwest to earn  the prestigious James Beard Award as Best Chef, along with many other awards.

Chef Pyles is a pioneer of New American Cuisine and considered to be responsible for bringing Southwestern Cuisine to the forefront of the industry. He has opened 19 restaurants in 5 cities over the past 32 years, including Routh Street Café, Baby Routh and Star Canyon. Chef Pyles has also written four inspiring cookbooks and hosted two seasons of the Emmy Award-Winning PBS series New Tastes from Texas.

In the early years, Chef Pyles definitely paid his dues before reaching his world-class chef status. He began his restaurant experience busing tables and chopping vegetables at his family's Truck Stop Café in Big Spring, Texas.


Chef Pyles started out with a different career idea. He attended Texas A & M University to pursue music which was soon sidetracked. After he took a trip to France, exposing him to haute cuisine for the first time, he fell in love with the art of cooking, never looking back to music again.

His big break came when he was invited to The Great Chefs of France Cooking School at the Mondavi Winery. There, he became the Chef's Assistant and worked with Michelin 3-star chefs such as Michel Guerard, Jean and Pierre Troigros, Alain Chapel, Paul Bocuse and Gaston LeNotre. The rest was as they say, " history." Today, Chef Pyles continues to make culinary history by introducing new, innovative dishes, always paying homage to his Texas heritage.

Chef Pyles understands  the importance of giving back. He is a founding board member of an international hunger relief organization, Share Our Strength, and is a recipient of the organization's most distinguished award, Humanitarian of the Year.

Among other philanthropical ventures, for the last 12 years he has offered a $15,000 annual scholarship for a rising star culinary student in Texas. The Stephan Pyles Culinary Scholarship is one of the most prestigious in America. Pyles' protégés and past culinary team members, historically become among the finest in the industry.
