Chef Tony Roldan's passion for food began at a young age when he got his first job at a neighborhood diner. He was inspired to attend the Cooking and Hospitality Institute of Chicago. After graduation, Chef Tony landed at the Michelin-starred and legendary destination for molecular gastronomy, Moto. He then took on the challenge of creating world-class vegan cuisine as a lead line cook at the Green Zebra.
In 2010, Chef Tony entered the hotel culinary arena as Sous Chef at the swanky W Hotel City Center in Chicago and followed that with a position as Chef de Cuisine at the Sheraton Hotel and Towers Chicago. He joined the Renaissance Chicago O'Hare as Executive Chef in December of 2015. Chef Tony makes beautiful food by combining modern techniques and classic flavors to delight the eyes and the palette. In his free time, Chef Tony travels the world in search of his next inspiration.
